Every request to a website is a round trip. The browser asks, the server answers, and the answer travels back the way it came. Distance is part of that trip, and no amount of hardware takes it out.
A page is not one round trip. Opening the connection takes several, the TLS handshake takes more, and assets can take their own. The distance is paid on each one, so it adds up over a page rather than being spent once.
Hosting in Australia keeps that trip short for the people who are already in Australia.
This does not fix a slow site. A heavy page is slow from anywhere, and a shorter trip only makes it slow sooner.

Where data is stored has a bearing on whose law reaches it. Data held in Australia sits under Australian privacy law. Data held overseas is also reachable by the law of the country holding it.
