A dedicated server is one physical computer, used by one customer. No other tenant runs a workload on that hardware. You choose the operating system and you hold root or administrator access.
People buy one for the same two reasons: a workload that does not want a neighbour, or a rule that says the hardware cannot be shared.
Nobody else on the hardware
One machine, one customer. That is the whole difference from a virtual server, and the whole reason to buy one.

The limits, before you find them yourself
A physical machine does not grow on demand. Adding capacity means changing hardware or moving to a different machine, so buy for the workload you have now. A virtual machine is the easier thing to resize.
One machine is also one machine. Redundancy is something you design on top of it, and it is not part of the price.
